This dish will be ready in 30 minutes and will give you little bits of surprise flavors. You can have this meal as it is or serve it with pork chops - Enjoy!
Serves 6
Ingredients:
500g pasta screws
500g fruit cocktail - liquid drained
240g vegetable artchar - liquid drained
4 tbsp capers
400g bacon - diced
100g piquante peppers
15ml olive oil
parmesan shavings -use as much as you prefer
parsely to garnish
Method:
Cook pasta in a 1 litre boiling water for 15 minutes.
Heat oil in a pan and cook the bacon until slightly crispy.
Add the sugar to caramelize the bacon for one minute and set aside.
In a large bowl mix the vegetable artchar, piquante peppers, bacon, capers and fruit cocktail.
Add the pasta, drizzle the remaining oil and stir until combined. Season to taste, add parmesan and serve warm.
