Chili hot cranberry chicken

This is by far my favorite chicken recipe. Serve this with rice and a crunchy salad. I like mine to be a broccoli and carrot salad with my version of tzatziki dressing.



Ingredients:

  • 4 chicken thighs

  • 60ml cream

  • 2 chopped chilies

  • 1tsp salt

  • 1/2tsp ground pepper

  • 4 sprigs thyme

  • 1/2tsp turmeric

  • 4 garlic gloves

  • 300ml chicken broth

  • 70g cranberries

  • parsley to garnish


Method:

  • Season chicken with salt and pepper.

  • Heat a little oil in a pot and sauté the chicken thighs on both sides.

  • Add the garlic and thyme, stir for about a minute.

  • Add chilies and cranberries.

  • Add turmeric and stir for about a minute.

  • Stir in the broth and cream.

  • cover with lid and cook for about 20 - 30 minutes.
