This is by far my favorite chicken recipe. Serve this with rice and a crunchy salad. I like mine to be a broccoli and carrot salad with my version of tzatziki dressing.
Ingredients:
4 chicken thighs
60ml cream
2 chopped chilies
1tsp salt
1/2tsp ground pepper
4 sprigs thyme
1/2tsp turmeric
4 garlic gloves
300ml chicken broth
70g cranberries
parsley to garnish
Method:
Season chicken with salt and pepper.
Heat a little oil in a pot and sauté the chicken thighs on both sides.
Add the garlic and thyme, stir for about a minute.
Add chilies and cranberries.
Add turmeric and stir for about a minute.
Stir in the broth and cream.
cover with lid and cook for about 20 - 30 minutes.
