Apple Infused Chicken Breasts

Serve this tender chicken with basmati rice or creamy mashed potatoes. Tip: soak the chicken breast in salty water 15 - 30 minutes prior to cooking as this will help to tenderize the chicken, keeping it moist on the inside.

Serves 4


Ingredients:

  • 4 chicken breasts - about 450g

  • 20ml olive oil

  • 1 tsp black pepper

  • 1 tsp dried thyme

  • 1 red onion

  • 1 red apple

  • 200g sweet tomato relish

  • 200ml clear apple juice

Method:

  1. Season the chicken with black pepper and thyme.

  2. Heat oil in a frying pan and cook the chicken for 4 minutes on each sides.

  3. Set the chicken aside and saute the onion for 3 minutes.

  4. Add the apples and saute for 1 minute.

  5. Stir in the tomato relish and add back the chicken.

  6. Pour the apple juice and cover to simmer for 15 minutes.
