Serve this tender chicken with basmati rice or creamy mashed potatoes. Tip: soak the chicken breast in salty water 15 - 30 minutes prior to cooking as this will help to tenderize the chicken, keeping it moist on the inside.
Serves 4
Ingredients:
4 chicken breasts - about 450g
20ml olive oil
1 tsp black pepper
1 tsp dried thyme
1 red onion
1 red apple
200g sweet tomato relish
200ml clear apple juice
Method:
Season the chicken with black pepper and thyme.
Heat oil in a frying pan and cook the chicken for 4 minutes on each sides.
Set the chicken aside and saute the onion for 3 minutes.
Add the apples and saute for 1 minute.
Stir in the tomato relish and add back the chicken.
Pour the apple juice and cover to simmer for 15 minutes.
