This recipe was inspired by my daughter's love for mangoes and as a mom I thought it would be one great way to get her to eat leafy vegetables. Nonetheless the whole family enjoyed it too.
Ingredients:
1 mango
salad leaves
pre cooked pork ribs
For the dressing:
1 mango
5ml olive oil
20ml juice of lemon
crushed chilies - season to taste.
Method:
Cook the ribs according to packet instructions.
Blend all the dressing ingredients except the chilies which you should season with after blending.
In a hot griddle pan, place your mango slices until lightly charred.
Arrange salad leaves in a bowl and season with sea salt.
Add some mango slices and mix.
Allow ribs to cool and add.
Finish off with the remaining mango slices and serve.
