This impressive breakfast is enough to brighten up your day. Your heart will feel happy simply by looking at it. Enjoy with a nice cuppa coffee - delish!!
Serves 1
Ingredients:
2 slices rye bread
2 rashers of bacon
6 anchovy fillets
1 tbsp olive oil
10ml vinegar
small bunch of rocket
pinch of pepper
chives - optional
Method:
Half fill a saucepan with water and bring to the boil and then reduce the heat allowing a simmer.
Add vinegar and stir.
Break one egg at a time into a cup and gently slide into the simmering water.
Cook the eggs for 5 minutes if you like them well done, a bit less if you prefer them medium-cooked.
Heat oil in a frying pan and saute bacon until crisp.
Assemble your open sandwich, sprinkle pepper and serve.
