Anchovies + Poached Eggs on Toast

This impressive breakfast is enough to brighten up your day. Your heart will feel happy simply by looking at it. Enjoy with a nice cuppa coffee - delish!!

Serves 1


Ingredients:

  • 2 slices rye bread

  • 2 rashers of bacon

  • 6 anchovy fillets

  • 1 tbsp olive oil

  • 10ml vinegar

  • small bunch of rocket

  • pinch of pepper

  • chives - optional


Method:

  1. Half fill a saucepan with water and bring to the boil and then reduce the heat allowing a simmer.

  2. Add vinegar and stir.

  3. Break one egg at a time into a cup and gently slide into the simmering water.

  4. Cook the eggs for 5 minutes if you like them well done, a bit less if you prefer them medium-cooked.

  5. Heat oil in a frying pan and saute bacon until crisp.

  6. Assemble your open sandwich, sprinkle pepper and serve.
